In which there is a cupcake recipe

Usually I'm a planner. I have my monthly meal plan done months in advance as a word doc. the accompanying grocery list is on excel. I make a certain number of my kids clothes each season a couple of months in advance. I have what I call the "ready for anything bag" in the trunk of my car. It holds... warm clothes, cool clothes, jammies, dresses, sweatshirts, hats, gloves, flashlights, ribbon, blank cards, water, a couple of beach toys, swiss army knife, sewing kit, and a first aid kit. It all fits in a beach bag. So yeah, I'm a little OCD.
 Last Wednesday I did something totally unplanned. I became an independent Mary Kay beauty consultant. It's a long story...
 Anyhoo... With all of the Mary Kay madness I completely forgot about Valentine's Day till 6pm tonight. Oops.
 Ever since my husband started at his job I'vesday a big huge unplanned thing happened. I became an independent e sent something sweet and homemade with him on holidays. I usually plan for days and have everything all purchased and staged for the baking day. So at 6 tonight I had to scramble to come up with something using what I had on hand. I was out of flour. I almost never run out of flour, but I've been doing a special diet, and I'm not eating things made without flour. Thankfully I had a cake mix. I cant remember buying it, but there it was in my pantry. Thank you God!

Here is what I came up with....

Chocolate Cherry Cupcakes

1 cake mix, I used a Duncan Hines Classic Yellow
10oz frozen cherries, chopped small
2 eggs
½ c water
1/3 c oil
2 squares of 60% dark chocolate, chopped

1 chop the frozen cherries in a food processor 
2 add all the ingredients to a mixer mix for 3 minutes
3 bake cupcakes at 350 for about 35 mins

I used this frosting.
